3 packages of gelatin dissolved in 3/4 cup of cool water 7 cups fresh cranberries, picked over and rinsed 3 1/2 cups cranberry juice Spice Bag 3 strips of orange zest 6 whole allspice berries 2 whole cloves 2 cinnamon sticks (tie in cheesecloth and add to cranberries) 2 cups sugar
Boil cranberries, spice bag and cranberry juice for 5-8 minutes, until cranberries pop. Put mixture through food mill.
Return to pan and add 2 cups of sugar. Cook for about 10 minutes to dissolve sugar. Add small amount of cranberry mixture to gelatin to loosen gelatin mixture. Add gelatin mixture to rest of cranberries, mix well and pour into greased mold. Refrigerate until it is set, unmold and serve.
Makes about 6 cups of cranberry sauce.
*This is not as sweet as canned cranberries, but has a nice spicy taste.
